This vegan Spelt Buckwheat Sunflower Seed Bread is easy to make and tastes great! Start making your own bread now! It’s cheaper, better and you know exactly what’s in there!
I always enjoy experimenting with different flours. I had a rather short gluten-free phase where I was convinced that I needed ALLthe gluten-free flours there were like corn flour, rice flour, buckwheat flour,… I didn’tlike the taste of buckwheat flour too much so I added a bit of it in the bread and it’s a really greataddition to the spelt flour. If you don’t have the buckwheat flour you can leave it out of course and just add more spelt flour or other flours you have laying around!
ThisSpelt Buckwheat Sunflower Seed Bread has – as the title may indicate – sunflower seeds in it, but additionally I added fennel seeds. Those are great for the taste! So I wouldn’t ditch them.
Baking my own bread has been something that I really enjoy. It’s good to know what exactly is in there, because even if a store-bought bread is vegan it often containsingredients that I can’t even pronounce, needless to say I don’t have the slightest clue what it is.
If you’re having a bread baking machine or a kitchen machine – it’s even easier! I don’t like the form of my bread baking machine so I only let it do the “bread kneading and rising” program, then take it out, form my own loaf and bake it in the oven – easy as that. My program only takes 1 1/2 hour (including three rising phases), so it is rather quick to have my own bread!
It’s possible of course to knead it by hand, just keep the dough covered when rising – otherwise it will dry out. The photo above shows the bread in the unbaked status. I’ve carvedit vertical & horizontal – if you don’t carve the bread it will pop up like it wants to and it doesn’t look that pretty!
Mix all the ingredients (first dry then add in the wet ones) and knead by hand until a soft dough forms or put all the ingredients in a bread baking machine or kitchen machine and let the machine knead the dough for you. Let it sit covered until it doubles in size (about 1-2 hours).
Preheat the oven to 500°F/250°C.
Cut the dough in two equal pieces and form the loaves.
Carve the surface of the dough lightly with a knife. I made a long vertical cut and many horizontal ones.
Let it rise again for about 20 minutes.
Then put the bread in the oven and take it out when it looks done. (I've had mine in the oven for 25 minutes!) You can knock on the bottom of the bread and when it sounds hollow it's done!
Notes
How long the bread needs to be in the oven depends on the form you're making. Loaves need about 20-30 minutes, rolls 15-20 minutes.

Spelt flour is also high in protein and fiber. When compared to buckwheat flour, spelt flour is higher in calories and contains more complex carbohydrates. It also has a slightly sweeter taste and texture than buckwheat flour, but the two can be used interchangeably for baking purposes.
Instead, start by subbing buckwheat for 25% of the wheat flour in a non-yeasted recipe (by weight or volume). For bread, you can try subbing buckwheat for 15% of the wheat flour in a yeasted recipe (by weight or volume).
First things first: Buckwheat isn't actually a wheat at all, which means that, unlike spelt and rye, the flour it creates is gluten-free. In fact, it's a grass, related to bitter greens like sorghum and tart fruits like rhubarb.
Unlike buckwheat, spelt (Triticum spelta) is a true grain with an appealing nutty taste. It is an ancestor of modern wheat and does contain gluten. It is high in fiber and B-complex vitamins and has 10 to 25 percent more protein than most varieties of commercial wheat.
Most spelt flour you find is whole grain flour. It's high in protein -high enough in gluten that it can be used to bake bread. Buckwheat is not a grain, it's a pseudocereal, meaning its seeds resemble grains and can be used in similar ways. It's often used as both a food crop and a ground cover.
Buckwheat contains phytochemicals, rutin and quercetin, which have antioxidant effects and reduce inflammation. These chemicals protect your cells against free radicals and prevent inflammation that can contribute to chronic diseases like cancer.
May improve blood sugar and diabetes: "Buckwheat may help improve blood sugar and manage diabetes because it provides a good source of fiber and has a low to medium glycemic index," says Barykoumb. "This means that it is absorbed slowly and doesn't result in high blood sugar spikes.
However if you use it in combination with a starchy flour such as sweet rice flour or tapioca flour or even a nut flour like almond flour then you can produce beautiful light fluffy bakes with a good structure.
This 1-Ingredient Gluten-Free Buckwheat Bread recipe is an absolute game-changer! I've been making it every single week since early 2022, and it never disappoints! It's incredibly easy, delicious, and super nourishing.
Why Is It So Expensive? While the global production volume of wheat reached almost 785 million metric tonsin season of 2022/2023, at the same time, buckwheat global production was slightly above 2 million metric tons, therefore it is a minor crop compared to other grains.
Simply add hulled buckwheat groats to a high speed blender and blend on high until you reach a flour consistency. Buckwheat flour (both homemade and store bought) is an all purpose flour, which means that to make it self raising, you will need to add baking powder.
The glycemic index of spelt flour is estimated to be 55 to 67, according to The Diabetes Council, which means spelt flour has a moderate effect on blood sugar levels. It has a slightly lower glycemic index compared to whole wheat, buckwheat, corn, and millet flours.
Spelt and spelled are two different spellings of the past tense of the verb “spell.” The spelling tends to vary based on the version of English you're using: In US English, “spelled” is standard. In UK English, both “spelled” and “spelt” are acceptable.
There are key differences in the gluten components of spelt which is why some gluten/wheat-reactive people tolerate spelt better. Spelt has “minor” levels of Omega Gliadins compared with wheat and it does not contain the strongly antigenic Omega-5 Gliadins.
The choice is with you to opt for what suits you the best. My top six substitutes for buckwheat flour are oat, quinoa, sorghum, brown rice, chickpea, and gluten-free all-purpose flour, to get a parallel consistency.
Spelt flour has a unique nutritional profile and can be used in various baked goods. If you're looking for alternatives to spelt flour, popular substitutes include almond meal, coconut flour, and oat bran flour. Additionally, einkorn and kamut wheat flours are ancient grain options that offer similar flavor profiles.
Our Organic Spelt Flour is a direct substitute, meaning that it allows you to seamlessly substitute whole wheat or all purpose flours with spelt flour in a 1-to-1 ratio in any of your favorite recipes. Spelt flour tastes best in baked desserts because it has a slightly sweet and nutty flavor.
