  • 2 lbs 900 g cauliflower
  • 2 oz. 55 g butter
  • salt and ground black pepper to taste

Making low carb simple

Instructions

Instructions are for 4 servings. Please modify as needed.

  1. Preheat the oven to 400°F (200°C).

  2. Trim and cut the cauliflower into small florets; the smaller, the quicker they will be done.

  3. Place in a large baking dish. Salt and pepper to taste.

  4. Cover with thin slices of butter. Bake on the upper rack in the oven and roast for about 20 minutes or more, depending on the size of the florets.

Air fryer method

Preheat the air fryer to 375°F (190°C).

Trim the cauliflower into small florets. Melt the butter, and toss the cauliflower florets in the butter. Season with salt and pepper.

Place in the air fryer for 16 minutes, turning the florets over halfway through.

    I made this with fresh cauliflower the first time, and with frozen the second time. The fresh cauliflower still had some solidness and was so much better. The frozen cauliflower was mushy.

    placed these out on the Teager in a proper oven-pan... but at 400 degrees, the butter starts to smoke something fierce (butter starts to smoke around 375. Next time I'll use Ghee instead)! Had to lower temp to 375 and continue. Turned out great (other than the billowing smoke that made our backyard look like it was on fire! LOL)
