Gluten Free Cinnamon Bread

  • ¾ cup Cane Sugar (162 g)
  • 2 cups Bob’s Red Mill White 1 to 1 Flour (296 g)
  • 2 tsp Cinnamon
  • 1 tsp Baking Soda
  • ½ tsp Baking Powder
  • ½ tsp Salt
  • 1 cup Milk or Dairy Free Milk Alternative (240mL)
  • 1/4 cup Olive Oil (60 mL)
  • 1 TBSP Apple Cider Vinegar (15 mL)
  • 1 Egg
  • 1 tsp Vanilla

Topping

  • ¼ cup Cane or Turbinado Sugar (45 g)
  • ¼ tsp Cinnamon

Preheat oven to 350°F. Coat three 5.75″ x 3.35″ x 2.25″ mini loaf pans or one 9″ x 5″ loaf pan with nonstick spray.Combine milk, oil, vinegar, egg, and vanilla in a bowl. In a separate bowl, combine the sugar, flour, cinnamon, baking soda, baking powder, and salt. Gradually add the dry ingredients into the wet. Mix just until combined. Pour into prepared loaf pan.In a small bowl, mix together the topping ingredients. Evenly sprinkle each loaf with the cinnamon and sugar topping mixture.Bake for 35-40 minutes for mini loaves, 50-60 minutes for a large loaf or until a toothpick inserted in the center comes out mostly clean with a little bit of gooeyness on it. You can remove it from the pan after it has cooled for about 10 minutes or leave it in the pan and give it as a gift.

    Do you think I could make this in an 8x8 pan? More coffee cake than loaf?

      Hi Alexandra - Yes, this recipe would also work in an 8 x 8 square pan. Bake for about 45 minutes or until a toothpick inserted in the center comes out mostly clean. Enjoy!

      Hi Virginia - We didn't test it specifically but I bet a granulated sugar substitute (Stevia, Splenda) would work well here.

      I have used apple sauce or crushed pineapple for granulated sugar; both add quite a bit of liquid as well. They compensate for sweetness but are a little off for texture and moisture. Works best when recipe calls for water or milk so you can simply add less. When making the sugar mixture, if too wet, add some tapioca or cornstarch to compensate.

      Hi Diane, this recipe calls for our Gluten Free 1-to-1 Baking Flour which already has xanthan gum in the mix. You shouldn't need to change anything else. Enjoy! :)

      Perhaps you could use dehydrated apples and to plump them up soak them for 5-10 minutes like raisins. It's just a thought.

      Hi Shirley - that's not something we've tested. This recipe does not require a long knead or any rise time, so it likely would not be beneficial to bake this in a bread machine versus a conventional oven.

    Could I substitute plain vinegar for apple cider vinegar?

    I will never forget opening my first bag of Bob’s oatmeal!! Who knew that oatmeal could smell fresh and delicious?! I am allergic to oatmeal, but I make it for my family. What a difference Bob’s makes to the finished product! Yum!!! I do not have to worry using Bob’s oatmeal as it is g-f. Thanks for making such great products!

    It was delicious but the sugar/ cinnamon on top ended up as a hard shell that actually separated from the rest. I actually made it in a 9x11 casserole dish and just increased the recipe a little. What could’ve made the topping do what it did?

      I Kelly! I spoke with the recipe developer and she said, "I would first make sure the oven was the right temperature (meaning an oven thermometer) and that the oven was fully preheated before the bread was put in the oven. The only thing I can think of is that the temperature wasn't quite right, which made the topping or bread cook at a different rate and separated from each other."
