This creamy chorizo pasta really is very quick and simple to make…

All you need to do is put the pasta onto cook. Meanwhile, fry onions, red pepper and chorizo. Next add passata and simmer for 5 minutes. Finally add the cream, drained pasta and basil. Easy Peasy!

What to serve with creamy chorizo pasta

This easy peasy chorizo pasta really is a complete meal in it’s own right. But if you wanted to make this meal more substantial, you could serve it with French bread or garlic bread and/or a side salad.

What to drink with creamy chorizo pasta

The bold flavours in this pasta dish work well with bold Italian reds, such as Nero D’Avola, Primitivo or Valpolicella Ripasso. Away from Italy, good options include Zinfandel and Portuguese reds, such as Touriga Nacional.

If you prefer white, I recommend a gutsy Sauvignon Blanc from somewhere like Chile, Australia or New Zealand.

Make it your own…

This easy peasy pasta is very easy to adapt. You could…

  • Add leftover roast chicken or pork
  • Use bacon instead of the chorizo
  • Use regular British sausages instead of the chorizo (fry or grill the sausages first, then slice and add in at the same time as the passata)
  • Use chopped tinned tomatoes instead of the passata
  • Add a tin of cannellini beans, haricot beans or butter beans at the same time as the passata to bulk this up and make it go further
  • Add diced mushrooms, courgettes or carrots instead of, or as well as, the red pepper
  • Add a teaspoon of dried chilli flakes at the same time as the chorizo (more if you like things hot!)
  • Use dried oregano or Italian herbs instead of fresh basil
  • Use crème fraiche or cream cheese instead of the cream
  • Leave out the cream if you’re not a fan

Can you ‘make ahead’ creamy chorizo pasta?

I don’t recommend you make the whole dish ahead of time, but you can certainly make the sauce ahead of time. Put the cooked and cooled sauce in a lidded container and place it in the fridge, where it will keep for up to 3 days.

To reheat, tip the creamy chorizo sauce into a saucepan and heat gently until piping hot. Stir in freshly cooked pasta and serve.

Can you freeze creamy chorizo pasta?

I don’t recommend you freeze the whole dish, but you can definitely freeze the sauce. Put the cooked and cooled sauce in a lidded container and place it in the freezer, where it will keep for up to 3 months.

Defrost overnight in the fridge and reheat as above.

Ingredients

Metric - US Customary

  • 300 g pasta (rigatoni, penne or fusilli work best)
  • 1 tablespoon olive oil
  • 1 medium onion finely diced
  • 1 red (bell) pepper diced
  • 130 g chorizo diced (I recommend you buy this ready-diced as it makes cooking this dish much quicker and easier!)
  • 400 ml passata
  • 75 ml double cream (US - heavy cream)
  • Salt and pepper to taste
  • 10 g basil leaves plus extra for garnish (optional)
  • Parmesan grated (optional)

Instructions

  • Cook the pasta according to packet instructions / your own preferences. Drain immediately when cooked to your liking.

  • Meanwhile, place the olive oil and diced onions in a fairly large saucepan and fry over a low heat, with the lid on, for 3 minutes, or until softened but not brown.

  • Add the red pepper and chorizo and fry on low for a further 3 minutes.

  • Add the passata, turn up the heat and bring to the boil, then turn the heat right down and simmer for 5 minutes.

  • When the 5 minutes are up, add the cream and cook for 1 more minute over a low heat, then turn off the heat.

  • Tip the cooked pasta into the sauce and turn the pasta in the sauce until it is well coated.

  • Rip up the basil and stir it into the pasta.

  • Serve garnished with more basil – on its own or with grated cheese.
