This Avocado Salsa Verde recipe is so easy to make with less than 10 ingredients! This salsa is perfect for an appetizer, snack or a sauce drizzle on top of some chicken or fish!

Homemade Avocado Salsa Verde

When Mike and I first got married one of the first things we did was go through Financial Peace University, the Dave Ramsey course on financial freedom. I was not the one who wanted to go. I was more like the one who gotdragged to the first class, kickin and screamin. Money was a sore subject in my family. We didn’t talk about it much, but we did. It always felt we were playing catchup and angry, blaming and frustration were always part of the subject.

Like most couples, we entered into our marriage in debt. I had a small student loan, Mike had some student loans, and then a car loan that he had from college. Plus we had just bought our first house.

Mike believed that if we were able to start off on the right foot financially it would relieve a lot of pressure. I agreed to go to the class and was completely shocked (eye wide open) about debt, collectors, banks, how to much money you can actually start making if you pay things off and are debt free!!!

After about 3 classes I was all in. We went to an envelope system, where we pulled cash out for the month and paid for everything with that. No more credit cards. We would sit down and do our budget together each month and try to figure out which things we could cut, so we could put money towards our debt to pay it off. It was actually pretty fun, and I took it as a challenge!

We were able to pay off our all our debt in 18 months. And 2 years ago, we paid off our house. It is incredible to live in that freedom.

We used the envelope system a lot early on, but after we paid off our debt we moved to an online envelope system. Honestly, you don’t feel the “burn” as much in your pocket and we started overspending again.

Recently, Mike started coordinating the Financial Peace class at our church. The last time I attended was like 9 years ago, so I thought it would be fun to watch the videos again and go through the class with him. Ya’ll, I love it! It is so motivating! I always leave feeling amped up. We actually went back to the envelope system this month. Cut our budget back because we want to save for building our new house.

This month we have to buy stuff for Cason’s birthday party because his party will be on the April 1st.Mike and I agreed on a budget, he gave me the cash and I set out to stay under budget while still having a fun Ninja Turtle Party.

This past weekend Cason and I went to the Dollar Store, Hobby Lobby, and Walmart. We picked up EVERYTHING that I needed for the party using coupons, price checking, and bargain shopping. We stayed under budget! I came back home with the biggest smile on my face, seriously so proud! I didn’t think I would like going back to the envelope system, but I forget how much fun it is. You shop smarter with cash and you buy less! If you haven’t gone through the class before, I’d highly recommend it. It changed the way we live!

Ok, sorry I just had to tell you. I was seriously so excited when I came back from my shopping last week.

Ya’ll know I’m pretty much obsessed with any and everything Tex-Mex. If we ever move, it would be a huge tragedy!

Whenever we go out and the server places that red salsa and green salsa in front of me with the chips. I ALWAYS lean towards the green! I love the zing that the tomatillos bring to salsa! I’ve roasted them before to make salsa and it’s great. But my new favorite way is using them raw! It tastes sooo fresh! I added in a little avocado to this recipe to make it creamy. Plus avocado just makes everything better! 🙂

This Avocado Salsa Verde is perfect for an appetizer, snack, or as a sauce drizzled on top of fish or chicken. (which is how we used it, over grilled cod… so yummy!)

Description

This Avocado Salsa Verde recipe is so easy to make, with less than 10 ingredients! It’s perfect for an appetizer or a healthy snack.

Ingredients

  • 6 tomatillos, husked removed
  • 1/4 cup chopped sweet onion
  • 3/4 cup fresh cilantro
  • 1 garlic clove
  • 2 tablespoons lime juice
  • 1 jalapeno
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1 large avocado

Instructions

  1. To a food processor, add tomatillos, sweet onion, fresh cilantro, garlic clove, lime juice, jalapeno. ground cumin, and salt. Blend until smooth and starts to look like salsa.
  2. Next add in one avocado. Pulse the blender 5-6 times to blend all the ingredients together and avocado is slightly chunky.
  3. Serve!
