Cauliflower is a much loved vegetable at home and I often purchase if I spot fresh cauliflower. We get very fresh and all white cauliflower mostly from October here and I have been buying it every week. I love to experiment with the vegetable trying a recipe that I have not tried before. However there are certain recipes that spell comfort to me and these south Indian curries with minimum ingredients are something I love, for the taste, flavor as well as the simplicity in the making.

Here I have used very few spice powders and south Indian tempering to make cauliflower curry recipe, this curry goes very well with sambar, rasam etc. I served this simple cauliflower fry with carrot thogayal, rice and raita, very simple yet comforting meal.

Fresh cauliflower florets are par boiled and sauteed with onions and spices, finally garnished with some cilantro leaves in this recipe. This recipe hardly takes 20 minutes, you can double the recipe if you want to cook for more people.

Serve cauliflower curry hot with rice or you can even pack it in tiffin for toddlers and kids. Pack it with roti or use this as filling to wrap the roti.

Cauliflower curry recipe with step by step photos:

1. Bring plenty of water to boil in a pot. Add seperated cauliflower florets along with a pinch of salt and turmeric. Boil for 2-3 minutes. Let the florets stay in hot water for 3-5 more minutes. Drain and set aside.

2. Heat 3 teaspoons oil in a kadai. Temper with mustard seeds, urad dal and curry leaves. Add finely chopped onions and saute till the color changes slightly.

3. Add the par boiled cauliflower florets and mix well.

4. Add salt, chilli powder and turmeric powder.

5. Mix well and saute for 8-10 minutes at regular intervals. Maintain medium flame.

6. Once the cauliflower florets are well cooked, remove from flame and serve cauliflower curry hot.

Ingredients

  • 1 medium sized cauliflower florets separated
  • 1 onion finely sliced
  • 1/2 teaspoon chilli powder
  • 1/2 teaspoon turmeric powder
  • Salt
  • Oil
  • For tempering:
  • 1/2 teaspoon mustard seeds
  • 1/2 teaspoon urad dal
  • 10-12 curry leaves

Instructions

1. You can add asafoetida instead of onions
2. You can garam masala powder along with chili powder
